I do not use potatoes in my cholent - the classic recipe omits the carrots & uses potatoes instead. I prefer it this way AND it is much healthier! Ingredients

1 large onion
about 1 cup of baby carrots
1 pound short ribs (flanken) - cut pieces in between bones
3/4 cup pearled barley
3/4 cup cholent mix (found in kosher aisle, but can use any combination of dry beans)
1 to 2 Tbsp each of garlic powder, onion powder, & paprika
1 tsp. salt
1/4 cup ketchup
1/4 cup honey
Enogh water to cover all ingredients
Directions
Add ingredients to crock pot in this order:

beef
beans
barley
spices
ketchup
honey
Add water to cover all ingredients. Cook on high for 4 to 6 hours. Reduce to low & let cook overnight. This is a traditional Jewish dish made for lunch on the Sabbath as no cooking is allowed to take place on the Sabbath. The temp. is turned to low before the Sabbath starts on Friday night & then this delicious dish is enjoyed for lunch on the Sabbath itself.
