Ingredients

1 head broccolli cut into florets
one half cabbage,sliced
2 carrots, sliced
2 potatoes, cut into small chunks
1 can diced tomatoes (undrained)
1 cup dal (rinsed)
1/2 cup frozen green peas
1.5 TSP each of onion powder and garlic powder
1 tsp turmeric
1/2 tsp fenugreek
1/4 to 1/2 tsp tamarind
a few mustard seeds (1/4 tsp)
2 garlic cloves, chopped,and 1 onion, chopped
2 dried red chilies
a few curry leaves
1/4 tsp coriander
1 tbsp of ghee or evoo for sauteing onions/garlic
Directions
Heat some ghee or olive oil in a pan on medium heat, and saute the garlic and onions. Add the other spices (turmeric, coriander, sambar powder (substituted in this recipe with garlic and onion powder), mustard seeds, and curry leaves, and saute until spices become aromatic.
scrape sauteed mixture into a crock pot, and add remaining ingredients. Cook in crockpot on low for several hours.
