Flounder, Spinach, Garlic Salt, Fat Free Italian Dressing, Crushed Croutons, Lemon wedges
Directions
1. Heat oven to 400 degrees Fahrenheit. Spray 8x8x2 baking dish with cooking spray. If filets are large cut into 4 equal pieces.
2. Place spinach on flounder and sprinkle with garlic sauce lightly. Roll up each piece starting at the narrow end. Place rolls with seams at bottom in the pan. Pour 1 serving (2 tbsp.) of fat free Italian dressing onto each roll and drizzle crushed croutons onto dressing.
3. Bake uncovered for 15-20 minutes or until fish is fork flakey. Serve with brown rice, pilaf or orzo and a lemon wedge if desired.
