Ingredients

    Egg white, fresh, 2.5 large
    Egg, fresh, .5 large
    Spinach, cooked, .25 cup
    Cheese Boar's Head Grated Parmesan, 1 tbsp
    Tomatillo Salsa HEB, 2 tbsp

Directions

Beat eggs well with a fork.
Prepare omlette pan with Pam olive oil coooking spray
Put pan on medium heat
Add beaten eggs when pan is warm
Add well-drained spinach to one side of cooking eggs
Sprinkle parmesan cheese on eggs and spinach
Fold the omlette over when eggs are firm and nearly cooked
Continue cooking until done. Turn it over if you desire a more toasted finish on your omlette.
Plate the omlette along with tomatillo sauce.
Add some fresh fruit in if desired.
