Ingredients
-
1.65 pound package of skinless, boneless chicken
1 lb package of dry great northern beans
2 cups long grain brown rice
chicken boullion, salt, and pepper to taste
Directions
Put chicken, seasonings and and approximately 6 cups of water in a crockpot.
Rinse and soak beans according to directions (you can add water and bring them to a rapid boil on the stove, remove from heat, put a lid on the pot and let them sit for an hour instead of soaking them overnight).
Cooking time is according to preference and time needed:
Either put the crockpot on high, cook chicken for about 2 hours, add the beans, continue cooking on high for another hour or so, then add rice and let cook another hour or two until rice is done...
Or soak the beans overnight, put everything in the crockpot in the morning, and cook on low for 8-10 hours.
