Ingredients

    1 small onion
    2 garlic cloves
    2 Tbsp olive oil
    16 oz mushrooms, sliced
    2 Tbsp Balsamic vinegar
    1 Tbsp Worcestershire sauce
    1/4 c barley
    6 cups chicken broth
    1/4 c whole wheat flour
    1 c 1% milk


Directions

Saute one small onion, finely chopped, with 2 garlic cloves, minced, in 2 T olive oil. Add 16-oz sliced mushrooms and cook over med. heat 10 minutes. Add 2 T balsamic vinegar,
1 T worcestershire sauce and 1/4 cup barley; cook 2 min. Add 6 cups chicken broth and bring to a boil; reduce heat and simmer 20-30 minutes or unitl barley is cooked. Whisk together 1/4 cup whole wheat flour and 1 cup 1% milk. Add to soup; simmer 2 minutes. Makes about 5, 2-cup servings.

    I have made this several times TRULY an AWESOME soup recipe as is but ... today I will be adding baked chicken. Thankyou for posting it here on Sparkrecipes I lost my recipe.
