Introduction
This recipe can be modified to a smaller amount, but I have a big family who show up after the holidays to collect their share of the turkey egg rolls, which have become a tradition in my family after Thanksgiving and sometimes Christmas. You will probably need more than a cup of oil...I use about 3 or 4, but only 1 cup or less will be absorbed into the eggrolls so I put 1 cup for the sake of the nutrition calculator. Ingredients

1 medium head of cabbage
1 or 2 medium carrots
2 cups bean sprouts
2 cups diced or shredded turkey
6 Tbs lite soy sauce
2 pkgs egg roll wrappers
Vegetable oil
Directions
Shred cabbage and carrots. Dice up turkey and sprouts. Combine into a large bowl and add soy sauce. Fill each egg roll wrapper with a tight palm-full of the mixture and roll, making sure to seal all edges with a drop of two of water. Be careful not to tear the skins or too much oil will get in. Fry in preheated oil until golden brown. Drain well. Serve hot and enjoy!
