Introduction

Number of Servings: 4

Ingredients

    1 tablespoon olive oil
    2 cups chicken breast
    1 large carrot
    2 medium turnips
    2 cloves garlic
    1 tsp salt
    1 tsp dry chicken bouillon
    1/4 tsp tumeric
    2 tsp ground coriander
    1 cup water
    1 medium zucchini
    1 can garbanzo beans

    Couscous grains prepared separately (may add raisins and tumeric if you wish, and top with a few sliced almonds)

Directions

cook chicken in 2 tsp oil with onions and garlic. Add carrots, turnips, coriander, salt, bouillon, and tumeric. Pour water. Heat to boiling and reduce heat. Simmer 20 mins.

Add sliced zucchini and beans and cook 10 more minutes.
May add ground red pepper if desired. Otherwise sprinkle black pepper.

Prepare couscous as directed. May add 1 tsp olive oil, raisins and tumeric if desired.
