Introduction

This is a simplified version of an Indian recipe. This gets better if you leave it overnight for the flavors to meld. I make it and put it with the rice in containers for my lunches.
It makes a nice lunch.

Number of Servings: 4

Ingredients

    1 cup - rice, long grain
    14 oz - crushed tomatoes
    2 Tbl - olive oil
    pepper
    salt
    1 Tbl - garam masala
    2 tsp - ginger (fresh)
    1 clove - garlic
    2 cups - spinach
    1 can - chickpeas (garbanzo beans)

Directions

1. Put rice on to cook according to the directions.
2. Put the olive oil in a large fry pan
3. Chop the garlic and ginger and add them to the olive oil. Add the curry and garam masala. Cook stirring on medium heat until garlic starts to brown.
4. Strain and add chickpeas, browning slightly while stirring for a couple of minutes.
5. Add tomatoes and spinach, stir, and let simmer for a few minutes, until the spinach is wilted.
6. Add salt and pepper to taste.
7. Serve over rice.

Makes 4 servings.
