Ingredients

    6 salmon filets (4 oz each)
    1/4 t. salt
    1/8 t. pepper
    1/3 c. white wine or reduced sodium chicken broth
    1/3 cup apricot spreadable fruit
    1/2 t. grated fresh ginger root
    2 c. reduced sodium chicken broth
    1 c. uncooked long grain rice
    2 t. butter
    2 "T. dried chopped apricots
    2 T. minced fresh parsley
    1 T. minced fresh chives
    1 t. minced fresh thyme or 1/4 t. dried thyme
    3 T. sliced almonds, toasted

Directions

1. Place salmon in a 13 x 9 inch baking dish coated with cooking spray. Sprinkle with salt and pepper. In a small bowl, combine the wine, spreadable fruit and ginger; spoon over salmon. Bake at 375 degrees for 15 - 20 minutes or until fish flakes easily with a fork.
2. Meanwhile, in a small saucepan, bring the broth, rice and butter to a boil. Reduce heat; cover and simmer for 10 minutes. Add apricots; cover and sook 5 - 8 minutes longer or until liquid is absorbed and rice is tender. Stir in the parsley, chives and thyme. Serve with salmon. Sprinkle each serving with almonds.

    Very Good
    This was really good. I didn't have fresh herbs so substituted dried. Wasn't in the mood for rice so cooked farro instead which upped the calories some. - 10/21/16
