Ingredients

1 can White beans-rinsed and drained
1 can diced tomatoes- drained
2 cans water
2 medium zucchini peeled and cubed
1 small onion- chopped
1 Tbs. coarsely chopped flat leaf parsley
1 clove garlic minced
1 Tbs. olive oil
Italian seasoning and pepper to taste
Directions
Heat olive oil in pan, saute onions, do not cook until translucent. Add beans, tomatoes, water and remaining ingredients. Simmer for about 30 min.
Makes about 6-8 1 cup servings.
