Introduction

Number of Servings: 12

Ingredients

    3 cups sliced carrots
    3/4 cup chopped onion
    3 cloves garlic, minced
    2 Tablespoons Olive Oil
    1 15 oz can White Beans Rinsed and drained
    1/4 cup chopped roasted red peppers (jar)

Directions

In a medium pan cook carrots in boiling water for 15 minutes or until the carrots are very tender. Drain and let cool.

In a skillet cook onion and garlic in olive oil for about 5 minutes or until tender. Stir in the cumin and cook for another minute.

Put carrots in a food processor with beans and roasted peppers. Add the cooked onion mixture and process until very smooth.

Transfer to a serving dish and cover. Refrigerate for several hours before serving for best flavor.
