Introduction

Ingredients

3 tbps EVOO, divided
1 Medium Onion, diced small
2 tbsp Italian Seasoning, divided
8 oz Smoked Turkey Sausage (not breakfast sausage), cut into 1/8" slices
1/4 tsp Red Pepper Flakes
3 Cloves of Garlic
1/2 Cup Chicken Broth
1 14.5 oz Can of Diced Tomatoes in Juice
2 cups Fresh Spinach
1 tbsp Red Wine Vinegar
8 oz Whole Wheat Pasta (I use spirals)
Directions
Bring water to boil in medium pot, but do not add pasta yet!
In a second medium pot, over medium heat, cook onion and 1 tbps italian seasoning in 1 tbps evoo until onion is soft, stirring occasionally. Add sliced sausage, garlic and red pepper flakes. Cook for 5 minutes. Take pot off the heat, swirl in chicken broth. Return to heat and cook 1 minute.
Add pasta to boiling water. Cook until al dente.
Meanwhile, add tomatoes, 1 tbsp italian seasoning and spinach to sauce. Stir well, cover and cook 5 minutes. Uncover and cook 10 minutes until slightly thickened. Stir in 2 tbsp evoo and vinegar.
Drain pasta and toss with sauce. Sprinkle with parmesan cheese if desired.
Makes 4 servings.
