Number of Servings: 12

Ingredients

    2 large eggs
    1/2 tsp canola oil
    Juice of one lemon
    1 large stalk celery (finely chopped)
    3 cloves garlic (pressed) or to taste
    3/4 cup finely chopped onions
    1/2 medium red, sweet pepper (finely chopped)
    1 tbsp Hellman's Light Mayonnaise
    1 cup Pastene Italian Breadcrumbs
    1/2 tsp Sriracha Chili Sauce (or to taste)
    2.5 cups (or two 227g packages) Cloverleaf Delectables (or other brand) imitation crab meat

Directions

Makes 12 cakes, one serving is one cake.

Chop veggies finely, and combine with eggs, lemon juice, garlic and desired spices/sriracha sauce, mayo in bowl.

Take imitation crab meat and process in food processor until smooth. Combine with veggies, eggs, spices, etc and work with hands until well combined. Add breadcrumbs and combine well with hands until "dough" will form into patties. Form into 12 patties, and cook with a very small amount of oil (.5 tsp) in a non-stick pan, flipping as necessary. Cook until done, about 5-6 minutes.

I enjoyed mine with some additional low-fat mayo mixed with sriracha, lemon juice and pepper.

    O.K.
    Kind of bland. Added creole seasoning to add some flavor. I didn't have the sriracha (so that may have been my problem). I also used real crab and will try imitation next time. - 2/5/11
