Ingredients

2 pink grapefruit
1 1/4 cup old fashioned oats
1/2 cup apple sauce
1/4 cup oil
1/2 cup sugar
2 tbsp honey
1/2 cup loose brown sugar
2 eggs, beaten
1 1/3 cups all purpose flour
1 tsp baking soda
1/2 tsp cinnamon
Directions
Peel and section the grapefruit into a bowl (saving the juice) Strain the juice from the pulp and set pulp aside for later.
Measure the grapefruit juice and add water to make 1 1/4 cups.
Boil liquid, remove from heat and add in oats, oil, apple sauce and honey. Cover and let stand 20 minutes.
Combine remaining ingredients in a mixing bowl. Add grapefruit pulp and stir.
Pour into lined muffin pan and bake at 350 for 25-30 minutes.
Makes 16 muffins

This is a very good mix and very tasty, although I changed mine a little. I did rate in on the ingredients used, which turned out very tasting. Here's what I changed, 1 C. GF pulp, 1/3 sugar, 1/3 BS, 1 C. Flour and 1 C. Wheat flour, 1tsp and 1/2 soda, and I used chinese 5 spice in place of cinnamon. - 11/17/12
