Ingredients

    2 C water
    1/2 C uncooked brown rice
    1/2 C uncooked quinoa
    5 large green bell peppers, halved and seeded
    1 lb extra lean ground beef
    1 med. onion, diced
    salt to taste (I do not add it)
    garlic powder to taste
    ground black pepper to taste
    1 15 oz. can tomato sauce (I use Amy's or Muir Glen)
    Grated Parmesean or Mozarella to taste as garnish

Directions

prepare rice and quinoa as per package instructions (I minus 10 minutes), being careful not to overcook.
Preheat oven to 350F. In a medium oven safe pan, place enough water to cover bottom & place green peppers in pan. Place pan in oven.
In a large saucepan, brown ground beef, drain. Return to heat & add onion, cooked rice, garlic powder, salt, and pepper. Pour in tomato sauce & mix thoroughly. Let simmer for about 10 minutes, remove from heat.
Spoon mixture into each half of green peppers. Bake in preheated oven for about 45 minutes or until mixture begins to turn brown.
Sprinkle cheese over the top of each stuffed pepper, return to oven for an additional 5-10 minutes until chees is lightly browned.

    i tried this one without the ground beef, Less fat, less protein, still tasted good. counted it as .75 serving - 12/3/13
