Introduction

Ingredients

    1 pat unsalted butter
    1 large egg
    1 large egg white
    2.5 Tbsp chopped onion (about one slice, chopped)
    2 slices of fresh tomato, chopped
    1 slice of deli turkey breast, chopped into squares
    1 slice of swiss cheese
    1 Tbsp sour cream

Directions

1. In a small bowl or glass measuring cup, beat the egg and egg white together with a fork.
2. Melt butter in a small, omlette-sized pan.
3. Saute the onion on medium heat until slightly transparent. Add the tomato and turkey breast and saute for about 30 seconds more.
4. Reduce heat to medium-low and pour in the eggs, taking care to cover the entire bottom of the pan.
5. Let cook a couple minutes. Then, take a spatula and pull the edges back slightly while tilting the pan. This will make the uncooked egg on top flow into the space you've created and cook. Do this all the way around the pan every couple minutes until the egg appears to be almost cooked all the way through.
6. Tear the slice of swiss cheese in half and lay it down in a line across the middle of the omlette. Fold in half and cook for another 2-3 minutes; flip if needed.
7. Slide onto a plate and top with 1 Tbsp. sour cream.
