Ingredients

2 cups - Spinach, fresh,
5 leaves - Fresh Basil
2 cloves -Garlic
16oz Box - Ancient Harvest Quinoa Pasta, Rotelle
2 - Chicken Breast, no skin,
2 tablespoons - Olive oil
1 - 16 oz can - Cannellini (white kidney) Eden Organic
1/2 cup - Parmesan Cheese, grated
Directions
1 . Cook the Quinoa pasta as directed on the box.
2. While waiting for the pasta to cook - Mix in blender or food processor the spinach, basil, garlic, cannellini beans, olive oil, and grated parmasean cheese. Put mixture to the side
3. Dice the chicken breast into cubes and and season chicken with a pinch of sea salt and pepper. Then lightly brown in a deep skillet using a light coating of olive oil on the pan or non-stick cooking spray.
4. Mix the pasta and sauce together and let sit for 5 minutes or so to allow pasta to absorb the taste.
5. Add chicken to the pasta.
Can be surved as a side dish or a main meal.
