Introduction

Delicious Healthy muffin that tastes very decadent. No oil or sugar used. Substituted pumpkin for oil in original recipe. Used Stevia in the raw in place of sugar. Ingredients

    2 large ripe bananas , mashed (3/4 -1 cup)
    2 Tbsp pure pumpkin or unsweetened applesauce
    1 egg
    1/2 cup light silk unsweetened vanilla soymilk
    1 tsp vanilla extract
    2/3 cup whole wheat pastry flour (lighter than reg whole wheat flour)
    1/2 cup old fashioned oats
    1/4 cup stevia in the raw
    1 3/4 tsp baking powder
    1 tsp cinnamon
    2 tbsp ghirardelli unsweetened cocoa powder
    1 tbsp mini chocolate chips

Directions

Pre heat oven to 375
Combine bananas and next 4 ingredients through vanilla in med bowl. mix well and set aside

lightly spoon flour into dry measuring cup and level with a knife. whisk together flour remaining ingredients except chips until just combined. fold in choc chips

spray 12 muffin cups w baking pam and evenly spoon batter in to baking cups.

bake for 16 minutes

serving size = 1 muffin
