Ingredients

Whole wheat pasta ( penne/rotini)
Olive oil - 2 table spoon
Vegetables:
Onion - 1/4 cup chopped
zucchini - 1/2 cup chopped
Green pepers 1/2 cup chopeed
Garlic - 4 cloves -crushed
Broccoli - 1/2 cup
Olives ( optional)
Sun dried tomatoes - 3 pieces - chopped
Herbs:
You could use any italian dry herb powder.
marjoram - 1/2 teaspoon
basil - 5 leaves chopped
parsley - dried - 1 teaspoon - or a few springs chopped
oregano - 1/2 teaspoon
Directions
Boil a gallon of water, add 2 tablespoons of salt. Pour pasta in it and let it cook. Follow the direction on the pasta box to cook it. It would take about 15 minutes. Once cooked, strain and put aside.
Place a pan on medium flame and add the olive oil. Put the onion and garlic and saute till transparent. Put in the broccoli and zuccini. Once they are little bit cooked, add the bell peppers. Add a little salt and reduce the head to medium-low and cover and cook for 5 minutes. The vegetable must be still crunchy. Take it off the heat and add olives, sundried tomatoes and the herbs. Let is cool. Add in the cooked pasta and mix it well.
Nuts:
Walnuts/ pine nuts - (optional) gives a good crunch and depth of flavour- not added in the calorie calculation so do not forget to add it if you are using some.
