Introduction

Ingredients

3 boneless skinless chicken breasts
2 cans campbells golden mushroom soup
1.25 cups uncooked white rice
1 packet lipton onion soup
1 1/2 soup cans water
1 small can mushrooms (optional)
Directions
spray bottom of 9X13 pan with cooking spray. Slice chicken breasts into long strips about 1 inch thick or so. Spread on bottom of pan and sprinkle with salt and pepper. Cover with uncooked rice.
In a separate bowl, mix soup, water and mushrooms well. Pour over rice mixture and gently move rice and chicken around to allow some of the mixture to get between the chicken pieces. Sprinkle with Lipton soup mix (dry). Cover tightly with aluminum foil and bake in 375 degree oven for one hour.
After one hour, remove and stir well. Recover and place back in the oven until rice is tender (usually 15 minutes)
Serves 6 good size portions. (I just divide the pan by six and serve that way)
Serve with a green veggie for a delicious, filling, low calorie meal!
