Introduction

Ingredients

    1 boneless, skinless chicken breast
    2 Tbsp. Oil
    1 large onion, diced
    1 can (14oz) chicken broth, fat free
    1 can (14 oz) stewed tomatoes, undrained
    3 potatoes cut into bite size chunks
    3 carrots cut into bite size chunks
    1 can whole kernal corn, drained
    1 can cut green beans, drained
    1 envelope (8oz) Garlic and Herb dressing mix (Good Seasons brand)
    salt and pepper to taste

Directions

Heat oil in large skillet on medium heat. Saute meat and onions until brown. Add Broth, tomatoes, corn, green beans and dressing mix. Simmer for 15 minutes. Add potatoes and carrots and simmer for 45 minutes. You may also cook in a crock pot all day.
