Ingredients

    1 C. Natural Peanut Butter
    1/2 C. Smart Balance Light Buttery Spread
    1/2 C. Natural Sugar
    1/2 C. Packed Brown Sugar
    3 tbsp Ground Flax Seed
    3 tbsp Unsweetened Soy Milk
    1 tsp Vanilla
    1 1/4 C. Whole Wheat Flour
    3/4 tsp Baking Powder

    Preheat oven to 375. In small bowl, mix flax seed with equal parts water. Let sit. In large bowl, cream together sugars and butter, until blended. Beat in the flax seed mixture, soy milk, and vanilla one at a time. Combine the flour, baking powder and salt; stir into creamed mixture.

    Roll tablespoonfuls of dough into balls. Place cookies 2 inches apart onto ungreased cookie sheet. Press with fork.

    Bake 8-10 minutes.

Directions

Makes somewhere between 12-24 cookies.
