Ingredients

    1 pound extra lean ground beef
    2 cups raw brown rice, prepared according to pkg directions
    1 onion, chopped
    1 bell pepper, chopped
    1 can Rotel tomatoes and green chiles
    2 cans cream of chicken soup (98% fat free)
    2 cans cream of mushroom soup (98% fat free)
    2 cups shredded cheddar cheese, 2%

Directions

Brown ground beef with bell pepper and onion, drain. Mix beef mixture, cooked rice, soups, and rotel. Pour into casserole dish and top with shredded cheddar. Bake for 30 minutes at 350 degrees.
