Ingredients

Shrimp, raw, 8 oz (remove)
Celery, raw, 1 cup, diced (remove)
Mushrooms, fresh, 1.5 cup, pieces or slices (remove)
White Rice, long grain, .75 cup (remove)
Cajun Seasoning, 2 tsp (remove)
Vegetable Juice Cocktail (V8), 6 fl oz (remove)
Mrs. Dash (R) Lemon Pepper Seasoning Blend, 1 tsp (remove)
Directions
saute chopped celery and fresh mushrooms in Oil oil 10 mins.
Add clean, peeled, deheaded shrimp and saute until just pink
add seasonings and SPICY V8 juice
Add cooked rice.
let simmer on very low for 10 minutes.
I let my stay in the fridge overnight and then microwaved.
It is low in carbs and high in flavor.
Adjust shrimp to your taste and pocketbook.
I used HEB frozen rice w/poblano peppers and corn.
