A delicious and very easy cake to make. A delicious and very easy cake to make.
Number of Servings: 14


    1 cup Self-raising flour
    1 cup plain flour
    1/2 cup sugar
    125 g unsalted butter
    1 large egg
    3 T corn flake crumbs
    1 can Pie Apples
    150 g raspberries fresh or frozen
    1 t orange and lemon rind (optional)


Sift both flours into a mixing bowl then add sugar. Melt butter then cool down. Mix together vanilla and egg then add to flour mixture. Then add butter and work into the dough.
Preheat oven to 180C/350F. Grease 23cm/9" springform cake pan and sprinkle corn flake crumbs on base and sides. Take 1/2 of dough and press it into base of pan. With a fork prick the dough. Sprinkle more crumbs. Spread pie apples and raspberries. Sprinkle more crumbs and ground almonds. Grate lemon and orange rind, if using. Crumble the rest of dough on top.
Bake for 45 min till golden brown. Take out immediately, leave for 5 min then take off sides, turn onto a wire tray and let cool for several hours.
