Ingredients

    1 tbsp olive oil
    1 chicken breast cubed
    1 1/4 cup snap peas
    8 large mushrooms
    1 tsp salt
    1 tsp pepper
    1 tbsp garlic powder
    1 box Zatarain's Long Grain & Wild Rice

Directions

Cut chicken in cubes.

Put oil in medium skillet and heat. Add chicken and spices and saute until almost done. While chicken is cooking slice each mushroom into large slices (I did four slices per mushroom). Add mushrooms and peas to pan cover and simmer for approx 6 minutes.

Prepare rice according to directions on box. Divide evenly into 4 portions (approx 3/4 cup each). Divide meat and veggie mix into 4 portions and serve on top of rice.

    Incredible!
    So simple to make. I used the breasts from a pre-cooked chicken and just put it in the pan with the snow peas and mushrooms. My husband loved it. Personally, I will be cutting the pepper down to 2 tsps for my husband! But it was great! - 5/10/12
