Introduction

I'm the type of cook who cooks from scratch and doesn't measure anything so this was a challenge. So, feel free to play with the recipe, add a little more, or put less of something or even substitute for one of your favorites. I enjoy creating and cooking healthy meals. This soup is made from home made chicken stock. It's easy to make and allot healthier for you.
Note: Chicken stock should be made in advance as this process usually takes a day in its self. A good bone broth should simmer for hours...

Number of Servings: 8

Ingredients

    10 cups Bone Broth
    1 Lb. Boneless, Skinless Chicken Breast Meat, Cubed
    1 Md. Onion Chopped
    8 Medium Carrots, Sliced
    4 Cups Baby Fresh Spinach, Whole or Chopped
    2 Cups Broccoli Cut into Small Crowns
    2 Cups Italian or Plain Stewed Tomatoes
    1/2 Cup Wild Rice Blend

    Season To Taste

Directions

Place broth into your pot and add all other ingredients except the rice and season to taste. Add the rice to the pot when broth comes to a boil and or when vegetables and chicken are half cooked. Let simmer on medium to low until all ingredients are cooked the way you like them but making sure chicken and rice are cooked all the way through. Then enjoy.
This is a really healthy dish and great on those cold days...


Since I've never really measured this recipe out, I put serving size approximately 2 cups per serving and that is what the nutritional facts were based on...
