Ingredients

    1 package of ground turkey meat (Jenny-O)
    1/2 cup mushrooms, chopped
    1/2 fresh spinach, chopped
    1/2 C Extra-virgin olive oil
    1/2 C romano cheese
    1/2 C whole wheat bread crumbs
    1/2 C cooked whole grain couscous
    1 egg white
    1 tsp chopped garlic
    1 1/2 C chicken broth

Directions

Preheat oven to 350. Chop and saute the spinach and mushrooms in extra-virgin olive oil, add chopped garlic and saute about 8 min. Remove from heat. In separate bowl combine egg white, whole wheat bread crumbs, cooked couscous (make entire box according to directions and cook with chicken broth instead of water...save extra couscous for other recipes), cheese, spinach and mushroom mixture and 1 package of ground turkey. Set aside.

Wash and slice peppers length-wise. Remove seeds and membrane. Place peppers in a microwave safe dish and cover with heavy-duty plastic wrap. Microwave on high approx. 5 minutes until a little soft but still crisp. Drain peppers and fill with turkey mixture. Cover with aluminum foil and bake 25 min. Remove foil and bake for 15 more minutes. Serving size: 2 peppers.
