Ingredients

    1.5 lbs - Honeysuckle White Turkey Breast Cutlets

    1 T- Goya Extra Virgin Olive Oil

    1/16 t - Salt

    1 t - Coursley Ground Black Pepper

    1 1/4 C - Frozen Chopped Broccoli

    1/2 C - Carrots (grated or cut into thin strips)

    2 C - Low Sodium Chicken Broth (recipe found on sparkrecipes.com)

    1 C - Uncooked Rice

Directions

Heat oil in larg skillet

Sprinkle turkey with salt and pepper

Cook turkey in heated oil about 5 minutes on each side, until cooked through (no pink remaining)

Place broccoli, carrots, chicken broth and rice in large pan and bring mixture to a boil

Turn down heat to low and place turkey on top of rice mixture and cover

Cook for 20 minutes, until rice and vegetables are tender

Serves 4
