Introduction

The name says it all. This is a great leftover user-upper. I always make to much rice. I love to take this for lunch, the folks at work are always drooling. The name says it all. This is a great leftover user-upper. I always make to much rice. I love to take this for lunch, the folks at work are always drooling.

Ingredients

    3 oz Pork loin (lean)
    1/2 Cup Asparagus
    1/2 tsp Paprika
    1/2 Cup Brown rice (cooked)
    1/2 tsp. extra Light Olive Oil

Directions


1. Preheat oven to 400°F.
2. Prepare the asparagus spears by cutting off the last inch or so of the woody stalk. Spread the asparagus spears on a baking sheet. Brush them with olive oil, especially the tips, and sprinkle with salt.
3. Season pork with paprika, salt and pepper.
4. Roast the asparagus and pork on the top rack of the oven until the stalks begin to get tender on the outside, about 10 to 12 minutes. (Thin asparagus spears will take less time, while thicker spears will take more.)
Depending on thickness of loin.
Broil chops for about 6 minutes, turn over, cook another 6-9 minutes
