Ingredients

    1 cup +2 tbsp Living Harvest Organic Hemp Protein- Vanilla Chai (or other Vanilla Protein powder)
    6 tbsp unsweetened coconut (flaked or shredded)
    8 oz almonds, whole raw
    1/2 cup oats
    1/2 cup almond butter
    1/2 cup honey
    1 tsp pure vanilla
    ~1/4-1/3 cup water



Directions

Mix almond butter, honey, and vanilla. Microwave to soften.
In a separate bowl add water to protein powder to reach a thick dough-like consistency.
Add softened almond butter/honey mixture and stir to combine.
Add oats and coconut.
Stir in almonds.
(At this point I needed to add 2 more tablespoons of a different vanilla protein to thicken the mixture)
Press into a 9x13 pan. Chill 12 hrs. Cut into 6 rows of 3- small granola bar shape.
Or drop "cookie-shaped" onto wax paper.
Bag or wrap individually
