Introduction

Pureed Roasted tomato and Black bean soup with chicken and corn. Pureed Roasted tomato and Black bean soup with chicken and corn.
Number of Servings: 8

Ingredients

    4 cups low sodium chicken broth
    1 12-oz can Diced tomatoes ( Fire Roasted optional)
    1 12-oz can Rotel
    1 12-oz Corn
    1 12-oz can Black Beans- rinsed.
    12 oz boneless skinless chicken breast
    1 large avocado
    1/2 Cup Sour Cream
    4 oz - part skim mozzarella cheese

Directions

Boil the chicken in the chicken broth until done. Remove the Chicken and shred and put aside.
To the chicken broth add the tomatoes ( I prefer Fire Roasted in the can), the Rotel, and Black beans, simmer until heated through.
With an immersion Blender, puree the mixture until smooth, add the corn and chicken and heat through once more.
Serve 1/2 oz of cheese, 1 tbsp sour cream, 1/8th of the avocado diced.

Makes about 8 - 1 cup servings

    I made this for lunch today. It was great! I added extra chiles to mine and short-cut chicken (pre-cooked). I also only plused half the beans since I wanted some whole ones. I plan to make this again. Thanks for the inspiration! - 1/23/11
