Introduction

I had this burrito at a Mexican stand at the flea market in my town. To my surprise they did not use any dairy or tomato or lettuce. I was hooked. My first time eating authentic Mexican food. So I recreated it at home with some substitutions. Hummas for refried beans, and I didn't include the very hot salsa, whole wheat home made tortillas. Ingredients

    Cilantro, raw, 2 tbsp
    Hummas (Bean Spread), Lemon & Garlic, Cibo Naturals, 2 tbsp
    Cabbage, fresh, .5 cup, shredded
    Chicken Breast, no skin, 1 breast, bone and skin removed (diced)
    Paprika, 1 tsp
    Garlic, 1 clove
    Onions, raw, 2 tbsp chopped
    Basil, 1 tsp
    Pepper, black, 1 dash
    Balsamic Vinegar, 1 tbsp (optional)
    Extra Virgin Olive Oil
    homemade flour tortillas (recipe submitted by SALLYF55) or store bought tortillas of your choice
    1 Lime
    Salsa to taste

Directions

Follow cooking instructions for Flour tortillas or use store bought. Preheat skillet on low and add oil. Cut up chicken breast (dice), chop garlic and onion into a small dice and shred cabbage and chop cilantro. Add chicken, garlic and 1 tbsp of onion, paprika, basil, pepper, balsamic vinegar if using and saute ingredients together. Cut the lime in quarters.

Assemble Burrito: Spread 1 tbsp of hummas onto tortillas in the center, top with cabbage enough to cover hummas make a small mound but not to much. Top the cabbage with chicken and the remaining onion and cilantro. Serve with lime on the side. Squeeze lime on burrito before eating.
add salsa to taste.

To roll. Fold in opposite sides and then fold the other opposite side and tuck under filling and roll.

Makes 2 burritos Serve and enjoy!
