Ingredients

    1c. Kellogg's All-Bran Cereal
    1c. Nonfat Milk
    1 large egg
    3 tBsp. Smart Balance Light Buttery Spread
    1/2 c. raisins
    1/4 c. slivered almonds
    1 c. Whole Wheat Pastry Flour
    3 tsp. baking powder
    1/2 c. brown sugar, lightly packed
    1 tsp. cinnamon
    1/2 tsp. salt


Directions

Preheat oven to 400 and grease muffin pan. Combine cereal and milk. Add egg and spread, mix well. Add raisins and almonds. Set aside

Sift together pastry flour and baking powder. Add brown sugar, cinnamon and salt, stirring to combine.

Give wet bowl one last good mix, then add the dry items and stir til just combined. Spoon mixture into 12 muffin cups. Bake 15-20 min.

    I use 1/4 cup brown sugar Splenda to further reduce calories. These are good - 1/31/12
