Ingredients

    Whole Wheat Flour, 2 cup
    Oatmeal - Quaker old fashioned oats - dry, 0.7 cup
    Cinnamon Spice, 2 tsp
    Truvia (Zero Cal Stevia) 1 packet, 6 serving
    NSI Protein Powder, 4 serving
    Banana, fresh, 2 medium (7" to 7-7/8" long)
    Blueberries, fresh, 1.25 cup
    Baking Powder, 2.5 tsp
    Baking Soda, 1 tsp
    Water, tap, .5 cup (8 fl oz)
    Egg substitute, liquid (Egg Beaters), .5 cup
    Coconut Oil, 1 tbsp

Directions

Preheat oven to 350F.
Combine all ingredients, and scoop mixture into two lined 12 serving muffin pans.

Bake for 15min. Don't overcook! The first batch I made I burned because I cooked them 20 minutes so watch them carefully.

Makes 24 muffins, or if you like larger muffins- it makes 12 good sized muffins (moister than the small ones)

    My husband (who is diabetic) and I both really liked these. The "Truvia 1 packet, 6 serving" confused me so I used 4 packets of Truvia. Truvia isn’t as sweet as Sweet n’ Low or Splenda so if you’re substituting 2 packs would probably work. Mine turned out not to be super sweet which I liked. - 3/20/13
