Missing Pancakes with a lowcarb diet? These are wonderful! They can be used as bread (make less sweet) or melt butter w/a small amount of cinnamon to use as the syrup on top. Ingredients

8 oz. neuchatel cream cheese
1 T Splenda (Optional)
4 Eggs (separated)
1/4 tsp of Cinnamon
Directions
Blend egg whites separately first with the clean mixer blades until soft peaks form. Set aside.
Blend together cream cheese, splenda ,the 4 egg yolks and cinnamon until well blended.
Fold in and gently mix in the egg whites.
Pour into a medium hot greased skillet or griddle - about 1/8 - 1/4 cup of batter per pancake. Watch your heat and adjust down so you do not burn the pancakes. Let cook a couple of minutes until bubbles form and the top starts to dry. Flip and finish the other side.
Makes about 15 - 3" pancakes.
