Ingredients

    paprika, ground cinnamon, salt, ground ginger, crushed red pepper flakes, ground balck pepper, pork loin, olive oil, small onions, garlic cloves, low sodium chicken broth, diced tomatoes, cubed and peeld butternot squash, cilantro

Directions

Combine first 6 spice ingrediants in a medium bowl. Add pork loin that has been sliced into 1 inch cubes and toss to coat. Heat oil in Dutch oven over medium high heat. Add pork and onions and cook for about 5 minutes or until pork is nicely browned, stirring frequently. Add garlic and cook for 1 minute. Stir in broth and tomatoes and bring to a boil. Add squash, dried apricots and raisins. Reduce heat and cover. Simmer for 30 minutes or until squash is tender. Sprinkle with cilantro. Makes 4 servings.
