Introduction

Delicious, high fiber chili Delicious, high fiber chili
Number of Servings: 6

Ingredients

    1 tbs Olive Oil
    1/2 Onion, diced
    1 Med. Red Bell Pepper, diced
    1 Carrot, diced
    1 cup Frozen Corn
    1/4 cup Dried Lentils
    1 Chipotle Pepper in Adobo Sauce, seeds removed, chopped
    1 tsp Ground Cumin
    1/2 tsp Chili Powder
    1 tsp Garlic Powder
    1/4 tsp Salt
    1/4 tsp Ground Cayenne Pepper
    1/4 tsp Smoked Paprika
    2 cans Dark Red Kidney Beans, Drained
    2 cans Diced Tomatos

Directions

1. Heat Oil in large pot over medium heat. Add onion, red bell pepper & carrot. Saute until soft.

2. Add corn, lentils, chipotle pepper and spices. Stir for about a minute.

3. Add in beans and tomatoes. Stir. Cover and simmer on Med-low for about 30 minutes.

Tip: Serve over brown rice or add in some whole wheat pasta.
