Introduction

Yummy high-protein and fiber soup, with consistency of cream soup thanks to the beans. Yummy high-protein and fiber soup, with consistency of cream soup thanks to the beans.

Ingredients

    2 cans white beans, drained and rinsed
    1 bunch celery, chopped
    4 cloves garlic, crushed
    1 package frozen spinach
    1 package frozen broccoli
    water to desired consistency
    salt/pepper/spices to taste
    Parmesan cheese if desired

Directions

Bring vegetables and water to boil. Cook until vegetables semi-soft. Either add beans and puree with immersion blender, or let cool and puree in batches in regular blender. Return to pot, stir to combine, and re-heat. Add water to reach desired consistency and spices to taste. Nutrition info includes 1 T light parmesan cheese.
