Never thougth I'd like cooked spinach until I tried it with mushrooms and butter... this recipe utilizes a buttery alternative for fewer fat calories. Ingredients

    1 tbsp extra virgin olive oil
    1 tbsp Land O Lakes Fresh Buttery Taste spread
    3 cloves garlic, minced
    8 cups spinach - rinsed and drained
    1 cup sliced baby bella (or crimini) mushrooms
    1 tbsp heavy cream

Directions

Combine the olive oil and LOL spread in a saucepan over low heat; when melted add the garlic and cook 1 minute. Add the mushrooms and cook over low-to-medium heat, approx. 5 minutes. Mix in the spinach making sure to coat completely; cover and cook approx. 10 minutes. Add the heavy cream, raise the heat to medium, and cook -stiring occasionally - uncovered, an additional 5 minutes. Use a slotted spoon to serve - garnish with Feta cheese.

    This was not as creamy as I had expected. I did forget the feta cheese but I don't think that made a big difference in how I felt about the recipe. My husband did not care for it either. - 2/24/13
