Introduction
Trying to add some veggies and fruit to my morning muffin! Spelt flour is found with the whole wheat / rye flours in my super market. I use organic eggs, milk, and fruits. Ingredients

* *Oatmeal steal cut, (I cup)
* Milk, 2%, 2 cup
* *King Arthur Flour, White Spelt Flour (1/09), 2.5 cup
*Flax Seed Meal (ground flax), 8 tbsp
* Zucchini, 1 cup, grated
* Carrots, raw, 1 cup, grated
* Banana mashed 1 cup
* Egg, fresh, 2 large
* Brown Sugar, .5 cup, unpacked
* Baking Powder, 2 tsp
* Baking Soda, 1 tsp
* Salt, 1 tsp )
* Cinnamon, ground, 1 tbsp
* Cranberries, dried, sweetened (craisins), .5 cup
* Walnuts, .5 cup, chopped
* Hershey's Special Dark Chocolate Chips, 4 tbsp
Directions
Makes 24 muffins
Pre heat oven 350
Put steal cut oats in your mixing bowl and add the milk. This will soften the oats while you are getting the grating the veggies. Use your food processor or grate by hand your zucchini and carrots. Add wet veggies, bananas, eggs to milk and oatmeal. Add flour, baking soda, baking powder, salt, cinnamon to wet ingredients. Add cranberries, walnuts and chips. Divide evenly between 24 muffins. Either spray tins with pam or use cup cake liners to keep from sticking as there is no oil in this recipe.
You can sub out the bananas for grated apple or apple sauce. You can use blue berries or other fruit in place of the cranberries and chips. I just happen to be in the mood for this combo :)
