Ingredients

    Crushed Tomatoes, 100 grams (try to get good imported tomatoes)
    balsamic vinegar 2 tbsp
    Garlic 5 cloves
    Basil, 6 fresh leaves
    Oregano, ground, 1 tbsp
    Red Onion, chopped .25 cup
    Extra Light Olive Oil, 3 tbsp
    granulated Sugar, .5 tsp
    Green Peppers 0.5 cup, chopped

Directions

saute onion, garlic and green pepper in olive oil over medium heat. Add crushed tomatoes and balsamic vinegar. Add herbs, salt and sugar to taste. Bring to a low boil then reduce heat and simmer for 30 minutes (or longer). Serve over your favorite pasta.

    Simple and low sodium using the low sodium tomatoes. I always add lots of extra veggies like carrots, mushrooms, peppers and sometimes some black olives. Wonderful to freeze too. - 4/16/11
