Ingredients

    For Muffins:

    1 1/2 c. whole wheat flour
    1/2 c all purpose flour
    1 c. old fashioned oats or oat flour
    1 t. baking powder
    1 t. baking soda
    1 t. vanilla
    1/2 c. sugar
    1/2 cup splenda
    1/4 cup unsweetened applesauce
    1 c. fat free yogurt
    1/2 c egg beaters
    2 TB low fat mayo
    1 1 /2c. mixed berries, coarsely chopped


    Crumb topping.
    Ingredients
    1/4 c. all-purpose flour
    1/4 c. oats
    1/3 c. packed brown sugar
    2 TB butter, melted
    1/2 teaspoon ground cinnamon

Directions

Preheat oven to 350 degrees

Spray muffin tin with Pam cooking spray

For Muffins:
Combine dry ingredients in a large bowl, make sure to whisk thoroughly.

In a separate bowl combine wet ingredients, except for berries.

Carefully fold wet ingredients into dry ingredients. Be sure not to over mix. Fold berries into muffin batter. Let sit 10 minutes. Meanwhile combine crumb ingredients.

Measure 1 tsp of crumb mixture in to prepared muffin tin. Add batter, filling 2/3 full. Sprinkle with additional teaspoon of crumb mixture

Check for doneness at 10 minutes. Bake 15-20 min or until golden brown and a toothpick comes out clean. Remove to cooling rack. Cool completely before storing.

Makes 24 muffins.

    Incredible!
    Very tasty, used two single serve yogurts and a bitmore applesauce. I added 1/3 cup of ground flax in place of some of the flour and used fresh strawberries and blueberries. - 2/27/12
