Introduction

Ingredients

    1 chicken breast, boneless, skinless
    8 cups chicken stock
    2 cups water
    2 TBSP Olive oil
    3 Large Carrots
    3 stalks Celery
    1/2 cup frozen corn
    2 small onions,diced
    1 cup small Eden Organic Alphabet noodles (this is what makes it fun for the kids - if you switch it out for another noodle -be sure you acct for the difference in protein)
    Herb for seasoning (whatever you prefer - I like thyme, basil, dried cilantro, cayanne, dried onion powder)
    salt and pepper to taste


Directions

Heat 1 TBSP of oil in skillet
Cook Chicken until the thickest part of breast is white and juices run clear (season while cooking) pour other TBSP of oil over chicken while cooking, once done remove from pan

Cook onions in same frying pan letting them deglaze the leftover chicken bits and get tender. While cooking onions cut chicken into small chunks (smaller then bite size)

Pour chicken stock and water into pot, add chopped carrot, celery and frozen corn, then onion, add chicken and bring to boil, add noodles and cook 5 mins until tender - Enjoy!

I love to serve with garlic croutons and a bit of shredded cheese.
