Ingredients

    1/2 c. sugar
    1/3 c. creamy peanut butter
    4 egg whites or 1/2 c. egg substitute
    1-1/2 c. mashed ripe bananas (3-4 medium)
    1/3 c. water
    1-2/3 c. flour
    1 tsp. baking soda
    1/4 tsp baking powder
    1/2 c. milk chocolate or semi-sweet chocolate chips (optional)


Directions

Heat oven to 400 degrees. Spray non-stick muffin pans with cooking spray. Mix sugar and peanut butter with electric hand mixer. Stir in egg whites (or egg substitute) until blended. Add bananas and water; beat 30 seconds. Stir in all remaining ingredients except chocolate chips. Stir in chips. Pour into 12 muffin cups (approximately 1/3 c. batter per muffin). Bake for 18-22 minutes or until wooden pick inserted in center comes out clean. Cool in pans for 5 minutes, then turn out to wire rack to finish cooling. 12 muffins
