Introduction

Great for a cold day, quick to make. Great for a cold day, quick to make.
Number of Servings: 4

Ingredients

    1 tbsp olive oil
    4 skinless, boneless chicken breast halves, cubed
    1/2 large onion, chopped
    1 1/14 c chicken broth
    1 (4 ounce) can diceed green chilis
    1 1/2 tsp garlic powder
    1 1/2 tsp ground cumin
    1/2 tsp dried oregano or italian seasoning
    1/4 tsp cayenne pepper
    1/4 tsp crushed red pepper
    2 (15 oz) cans cannellini beans or white northern beans

    2 green onions, chopped
    2 oz shredded Colby/Monterey Jack cheese

Directions

1. Heat oil in skillet or med-high heat. Cook chicken, bacon, and onion 5-7 min, or until chicken is halfway done and onion is tender
2. Stir in broth, chilies, and spices. Reduce heat and simmer for 15 minutes.
3. Stir in beans and simmer for 5 more min or until chicken is completely cooked.

Garnish w/ green onion and shredded cheese.

Makes approx 4 servings.

Adjust cayenne pepper and/or add extra green chilies to make it spicier. Still good if you want to remove the bacon or replace w/ turkey bacon to cut fat/calories content a bit more (but like everything else it's better w/ bacon!)

    Great soup for company. Added a bit more peppers and used turkey bacon instead...Yum! - 5/27/08
