Introduction

Easy, delicious crepe-like pancakes. Can be fat free depending on the soy milk used. Easy, delicious crepe-like pancakes. Can be fat free depending on the soy milk used.
Number of Servings: 4

Ingredients

    4 tbsp whole wheat pastry flour
    2 tbsp sugar
    1/2 cup mashed ripe banana
    3/4 cup non-dairy milk (nutritional info based on unsweetened soy)
    pinch salt
    cooking spray

Directions

1. Add pastry flour, sugar, banana, non-dairy milk and salt to blender and blend on high until well-mixed. Allow to sit for a few minutes to remove any frothiness.

2. In the meantime, heat a non-stick skillet over medium.

3. Once pan is hot, spray with small amount of cooking spray and pour 1/4 of batter.

4. When the edges are golden brown, gingerly lift and flip the pancake over and cook for another minute until heated through. (Resist the urge to flip too early, as you will end up with a wrinkled, albeit still delicious, pancake.)

5. Repeat steps 3 & 4 to make the 3 other pancakes. Keep warm in a 200 degree oven until ready to serve. Serve alone, with maple syrup, or rolled up with a filling (like strawberry preserves).
