Ingredients

    3/4 to 1lb. Italian Turkey Sausage
    1 28oz can diced tomatoes
    2 14oz cans great northern beans
    1 8oz can tomato sauce
    1 10oz box frozen spinach
    2 14oz cans chicken broth
    1Tbs minced garlic
    1Tbs parsley
    1tsp oregano (or basil)
    1 1/2 tsp kosher salt
    1/2 tsp garlic powder
    1/2 tsp black pepper
    3 cups water
    1/2 lb. whole wheat pasta (Ditalini or other small tube pasta)
    Romano or Parmesan cheese to sprinkle

Directions

1. In large stock pot, brown Italian sausage. Drain excess grease.
2. Add diced tomatoes, beans, parsley, garlic powder, spinach, salt, pepper, chicken broth, tomato sauce, basil, minced garlic and water. Bring to a boil. Turn down to simmer and cover, 40 minutes.
3. Add pasta and cook uncovered until pasta is tender, appx. 10 minutes.
4. Ladel soup into bowls, sprinkle cheese on top and serve.
