Ingredients

3/4 cup whole wheat flour
3/4 cup white flour
1/4 cup ground flax meal
1/3 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 tbsp canola oil
2 carrots (or 1.5 cups) grated (can use mix of carrot, zuccini, apple)
1 egg, beaten
1/2 cup milk
cinnamon & vanilla (optional)
Directions
Makes 24 mini muffins.
Preheat oven to 400. Grease muffin cups.
Mix all the dry ingredients in one bowl and the wet ones in the other (carrots are wet). Combine just before cooking. Spoon mixture evenly into 24 mini muffin tins (could use 12 large muffin tins as well). Cook for 12 minutes until golden (about 18 minutes for larger ones).
